COOKING WITH CARLO INNOCENTI IN ARCIDOSSO
Arcidosso lies on the hills of Monte Amiata, in the province of Grosseto, Tuscany. Surrounded by chestnut and beech forests, Arcidosso has remained a quintessential medieval village since it’s inception in the early 900’s. Selected as one of the most beautiful villages in Tuscany, Arcidosso is charming, historic, and probably one of the friendliest villages in Italy.
One of the main landmarks in Arcidosso is the castle on the hill, built by the Aldobrandeschi family, who ruled the area for centuries. A small Italian village, Arcidosso is populated by a mere 4,ooo people, most of whom can trace their ancestry back to the Renaissance. Your cooking course will be held in the home of Carlo Innocenti; a 12th century house that has been in Carlo’s family for generations, and protected by the walls of the castle. If you ask a native Arcidossian, “Where can I find Casa Innocenti?” you will hear “Go to the highest house on the hill"

Pictured at the top with his daughter Isabel (program Founder), Carlo is the owner and chef of the house. He is a man of many resources: a gifted cook, an artisan and entertainer. He recently opened ‘La Locanda” (shown above to the right) just outside of Arcidosso and people, of course, love it! Carlo has spent 30 - years most of his life – in the entertaining industry. During the 1970’s, he was owner and the Jolly Club, one of the first discothèques in Central Italy. During the 1980’s, he was owner of Carlo’s Club, a popular discothèque in the area. He was also the head chef and owner of the exclusive Harry’s Bar in Punta Ala, a famous Southern Tuscany beach resort, and he has taught Tuscan cuisine cooking courses in Switzerland and now for 6 years to his American & Canadian guests in Arcidosso.
